It's currently extremely hot. So hot that I don't even feel like drinking alcoholic beverages. To be honest, I even bought non-alcoholic beers!
It's stronger than me, even without alcohol—I have to make a mix. So I looked (not for too long, really) for a refreshing, non-alcoholic drink. And boom (that's what I call it—Chocapic), the idea came to me of making a chilled peach tea.
The iced tea is simple: you drop a few tea bags into a large bowl at room temperature and let them soak for 3–4 hours, then add simple syrup and a few ice cubes. Why simple syrup? Because it blends better—I didn't want to spend an hour stirring my tea until the sugar grains finally disappeared.
For the peach side, it's simple you buy artificial peach aroma from … you're out of your mind, aren't you? This is CocktailMolotov, we do it right! I therefore made peach syrup.

Homemade peach syrup
Ingredients
- 400 g granulated sugar
- 40 cl water
- 4 peaches
Equipment
- saucepan
Instructions
- Pour the water and sugar into a saucepan and stir gently until dissolved. You can use low heat to speed this up, but do not let it boil!
- Cut the peaches into fairly thin quarters and add them to your syrup. If you haven't lit the fire (Jean-Philippe Smet, get out of this body) earlier, now is the time.
- Let it simmer gently, without ever boiling, for at least 30 minutes or even an hour.
- Press the peaches occasionally to release their juice. Strain through a fine-mesh sieve and pour into a bottle.Tadaaaa!
